We started our chocolate journey 5 years ago (how time flies!) when a planned career move to be a chef was sadly no longer an option due to a serious health issue. I've always loved feeding people and I will always continue to get a kick out of seeing people taste the chocolates and love them.
Two years ago, the business grew rapidly and we were no longer able to manage as a home/kitchen business. We moved house and had our garage converted into a fully -fitted kitchen which is our Chocolate Workshop.
I knew I wanted to make chocolates with the best, freshest ingredients. Our chocolate is Fino de Aroma which is an international classification rating it in the top 8% in the world. I also knew I wanted it to be sustainable so our chocolate comes from Casa Luker, a business in Colombia that invests locally. Its schemes provide work alternatives to drug gangs but also reinvest in its farmers and their families with education programmes and ways in which to improve their farming.
I knew we also wanted to offer something different. Being a bit of a geek girl, I got interested in flavour pairings and how they work. I got fascinated (for that read partly obsessed) with how we perceive and taste food before moving onto the temporal order of taste.
Didn't I give you a geek warning?! It's the way in which tastes react together when eaten together and in which order these come in to bounce around your palate. That's why we came up with the name Chocolates by Design. Not only did we want a visual design we also wanted our experimental range of flavours to be designed in a certain way so that it's a tasting experience. #Sorrynotsorry for being a bit sniffy with this bit!
